- 1 sprig Fresh mint
- 1 oz Fresh lime juice
- 1 1/2 oz Appleton Estate Reserve rum
- 3/4 oz Pure cane simple syrup
- 1 dash Angostura bitters
- Garnish: mint sprig
In a shaker, gently muddle the mint and lime juice.
Add the remaining ingredients except the Champagne and fill with ice.
Shake, and strain into a highball glass filled with fresh ice.
Top with Champagne and garnish with a mint sprig.
